Have you tried coconut flour yet? I’ve become a bit of a fan recently. Basically, it is super fine ground coconut that can be used in a multiple of dishes. Because it is ground so fine it keeps its nutritional properties, is high in protein and low in sugar. I like to add it to smoothies for an extra protein injection and to make my smoothies nice and thick. I also use it in baking and cooking as you can often replace ½ a flour measurement with coconut flour and then use an alternative flour for the other half.

My other favourite way to enjoy it is in my coconut pikelets. Easy to make and I often serve them with some probiotic yoghurt or coconut yoghurt plus some berries or nuts. These are the sort of things I like to make on the weekend when I have a bit more time otherwise it is usually a smoothie for me.

Banana and Coconut Pikelets

1 banana

3 dates

½ cup buckwheat

2 tbspn coconut flour

1 cup almond milk

Place all ingredients into a blender or food processor. Blend until smooth. Cook in a warm pan to the size that you prefer. I use a little coconut oil or butter in the pan for cooking.
