There is nothing nicer than fresh corn. Whether it is steamed, raw or cooked on the barbecue, it is always delicious and can be enjoyed in so many ways.

Most of us know it as a delicious yellow snack or an addition to a meal but it also comes in many other colours including whitish yellow, red, pink and blue.

Corn has been around for many years, dating back to 5000bc, and has it’s origins in Central America. Technically corn is a grain but is often referred to as maize.

Full of great nutrition corn comes in it’s own packaging which makes it handy to add to lunch boxes or dinner plates. Corn is a great source of B1, B5, vitamin C, E and folic acid as well as complex carbs, healthy fats and lots of fibre. Corn also has many health benefits including flavonoids and carotenes which give them the great colours and phytochemicals.

My favourite ways to enjoy corn are:

Grilled on the bbq

Corn fritters

My corn salad. This salad is a great way to enjoy seasonal produce and enjoy the last of these long summery days.

2 cobs of corn

3 large tomatoes

1 large avocado

1 cucumber

Place corn into a pot and steam or simmer until cooked. Alternatively, you can also grill it on the bbq. Take corn out and let cool.

Dice up cucumbers, tomatoes and avocado and place in a bowl.

Cut corn off the cob and place with other ingredients.

Add salt, pepper and balsamic vinegar to taste.
