Soup – by Tracey Wheeler

One of the few things that I like about winter, and there aren’t many, is my chance to have lots and lots of soups. There are many reasons I love soup but it is mostly because I get to make them to my own taste and palate. I’m not very good at following food rules and recipes so I find it really fun to be able to play around with whatever I have in the kitchen. They are also a great way to use up leftover veges and any that look like they are on their last legs. They’re highly nutritious due to the large vegetable content and great for adding some hydration and liquid to your diet.

My favourite ones tend to vary from time to time and what sort of mood I am in but at the moment I can’t get enough of my pea and broccoli soup.


Broccoli and Pea Soup

1 head of broccoli

1 cup peas

½ cup coconut milk or almond milk

½ cup chicken or vegetable broth

Salt and pepper to taste


Steam broccoli and peas until cooked.

Mix in blender with milk until well combined. Add salt and pepper to taste. Delicious!
